Bonnie Taste Test Kultured London’s McDonald’s Happy Meal Miso!
It is not often I meet someone who loves miso as much as I do!
Meet Jonathan - the founder of @Kulturedlondon. His miso truly blew my mind!!! 🤯
Kultured make crazy cool miso from the most extraordinarily ordinary food!! Think Cola bottles, think jammy dodgers, think pizza!! His passion for fermenting is so inspiring and it makes me itching to get back into the kitchen with my koji!
I wasn't sure whether I was going to like the range of wacky miso Jonathan brought for me to try, but DAMMIT, they were DELICIOUS! My 2 favourites were the Gregg's Sausage Roll Miso... and surprisingly, the McDonald's HAPPY MEAL MISO! Yes, you really can miso almost anything!! You might have spotted Jonathan recently on Jamie Oliver show together with his famous bacon miso! 🥓

Golden yellow in colour with a glossy finish, expect sweet and savoury notes, caramel tones and sweet soy sauce flavours. The sweetness of this sauce will cut through the savoury and richness of chicken and fish, caramelising beautifully on cooking. As it is quite a sweet sauce, we recommend not cooking on too high a heat for too long.
Expect savoury, sweet and smokey chilli notes, with a deep BBQ sauce flavour. The richness of this sauce will cut through oily fish and fatty meats like pork belly and chicken thighs, caramelising nicely on a BBQ. As it is quite a sweet sauce, we recommend not cooking on too high a heat for too long.
Who doesn’t love an upside-down cake? Just the name alone shouts fun and sticky tastiness.
When Abel & Cole sent me their organic selection of fruit and veg, and I saw the delicious apples in there, I just knew I needed to make something with it.
Miso caramel flavours are excellent with sweet sharp fruits like apples and pears, and a great way to enjoy the season's crop.
This is a pretty quick recipe that comes together in half an hour, so great for a weeknight treat.
If you have never used miso in a recipe before, don't worry, the savoury flavours work surprisingly well with sweetness, a bit like a salted caramel.
Using only organic produce from eggs to flour and butter really makes a difference in the bake, so we are delighted for our Miso Tasty miso to be part of the box at Abel & Cole.
It was such an incredible experience, and the team there are so slick - they really look after you and help you prepare well for the show. I chose a dish I love and make regularly so that I could be as relaxed as possible on set. Miso Butter Mushrooms with Whipped Tofu, served with soft boiled eggs for an umami rich brunch. Did I mention that the show was star-studded?! That's right!! There was the superstar Lucien Laviscount from Emily in Paris and Bridgerton...

Miso is essentially a thick, savoury cooking paste, most famous for making miso soups. It is made from fermented soybeans, and it originates from China, before being developed and refined further in Japan. It can be used as a soup or noodle base, as a marinade or dressing, even in desserts!
