Bonnie Chung’s Vegan Tofu Recipes On Channel 4’s Sunday Brunch With Simon Rimmer and Miquita Oliver
Thank you so much to everyone who tuned in to Channel 4’s Sunday Brunch this weekend, where I shared 3 vegan tofu recipes with the show’s presenters, Simon Rimmer and Miquita Oliver. The support has been incredible! I am very touched and I really hope that tofu starts finding its way onto more people’s plates this year!
I made Curried Coronation Tofu Sandwiches, Sweet and Spicy Tofu knots, and a Matcha Tofu Cheesecake. In the spirit of Veganuary, I made all these dishes vegan if they were not already.
It was brilliant to be back – It was my second time on the show and the guests Ellie Taylor and Ella Henderson were absolutely delightful. I loved what they said about the dishes, and hope they try to recreate them themselves.
The three tofu dishes I chose were quite different; to show how versatile and varied tofu can be; one soft creamy tofu, one spicy crunchy tofu and one sweet dessert. I really wanted to open people’s minds about tofu! I love surprising people with how versatile tofu can be, and wanted to show the different textures of tofu as well, as per my Tofu Tasty cookbook.
The curried coronation tofu sandwich filling is perfect for picnics and lunchboxes, but also great in a salad or as a topping for a jacket potato. Inspired by the famous chicken version of this dish, it’s a satisfying veggie sandwich filling that doesn’t contain any cheese. Tofu loves big bold flavours, and this recipe that contains chilli, mango, coriander and apricots and dried spices is really vibrant and full of texture. It comes together in 10 minutes and does not require any cooking – so easy!
The Sweet and Spicy Tofu knots are a crowd-pleaser at Miso Tasty but relatively unknown. The guests voted this to be their favourite from the show, which was brilliant! It was fun to show dried tofu on the show, and introduce it as a game-changing chicken alternative that is 100% soy and plant-based.
If you are looking to reduce the amount of meat you are eating, and want to enjoy protein from plant based foods, tofu should be your go-to.
Finally the matcha tofu cheesecake – I wasn’t sure how people would react to this as I know that Simon loves his desserts, especially traditional ones, based on their reaction to my miso banana bread in the Sunday Brunch we filmed last year. So I was delighted that the Sunday Brunch gang loved it so much! Tofu is really popular in desserts in Asia; its a lighter end to the meal and pairs well with more subtle flavours like green tea and fruit.
Due to covid restrictions, we had to film from home again and be ported into their studio from my home in Hackney Wick. One day, I will make it into the studio!
