For the miso crème fraîche
- In a small bowl, mix together the miso paste, sugar and 1 tbsp of the crème fraîche to form a smooth paste.
- In a large bowl, whip the remaining creme fraîche, until peaks form.
- Gently fold in the sweet miso paste until mixed in.
- Cover and refrigerate for 30 minutes before serving.
Matcha Cake Recipe:
- Preheat the oven to 170ºC, fan.
- Beat the egg whites until foamy.
- Add 1/3rd of the sugar and beat until firm peaks.
- Now take the egg yolks and add the remaining sugar, salt, water and vanilla and beat until fluffy and pale.
- Add half the egg whites and fold gently.
- Sift the flour and matcha, and baking powder into the egg yolk mixture, a small amount at a time.
- Add the oil by mixing in with a small amount of the batter in a small bowl, before adding it back in with the rest of the batter.
- Add the other half of the egg whites and fold to complete the batter.
- Place the cake batter inside a lined tin and bang it twice on the counter before baking for 30 minutes until a skewer comes out clean.
- Cool before slicing and serve with miso crème fraîche and some fresh fruit.
