Crystelle’s Ginger, Peanut and Miso Caramel Tarts
As you probably all know, I am obsessed with miso, and one of my favourite things to do with miso is to make miso caramel. I like to think of miso caramel as salted caramel’s cooler, more edgy older cousin. I use Miso Tasty’s white miso, and it’s a nice introduction to miso for those of you who haven’t used it before, as it’s a bit more subtle and slightly sweeter than the darker varieties, which pairs perfectly with caramel.

In this pizza, it is like you have added meat or anchovies to the pizza, only you haven’t; miso adds umami richness to tomato sauce in a vegan way. Clever? We think so!
