Miso Tasty Cucumber Spiral Recipe

- Wash the cucumbers under a running tap.
- Place two chopsticks one on each side of a cucumber, then cut through the cucumber diagonally leaving 2mm between each cut. The chopsticks will prevent you from cutting all the way through.
- Flip the cucumber over, so that the unsliced surface is facing toward you, and position the chopsticks as before.
- Next, slice the unsliced surface vertically between the cuts on the other side.
- Now you should have a spiral! Place all sliced cucumber spirals into a bowl.
- In a separate bowl, add the remaining ingredients and mix until combined before pouring over the sliced cucumber.
- Place in fridge to marinate cucumber overnight (or at least 4 hours), flipping half way through to ensure the marinade works all over.
- Serve as a refreshing side dish to your main meal. Also works as an appetiser sprinkled with toasted peanuts.
