The Sumo Wrestler's Hot Pot (Chanko Nabe) Recipe
If you are cooking for a crowd, this is quite a centrepiece. While it takes some effort, you won’t need to make anything else! Everything you need is here, which makes sense as it is the traditional diet of the sumo wrestler and forms the first meal of his day after a whole morning of exercise. This recipe is a much lighter version, though loaded with chicken, fish, tofu and vegetables. The miso here is in the fish balls, a signature part of the dish that has fuelled Japan’s national sport for centuries.
