“This white miso has an inviting boozy rice wine aroma. The paste is sweet with white chocolate notes, rich, creamy and vibrant, with plenty of bright citrussy acidity and a good touch of salt. There is lots of umami taste with a fermented, marmite-like, satisfying flavour. There is a long, well balanced finish and it was felt this miso would be a delight to use in the kitchen.”
“This [red] miso has a wholesome rusty red colour and a rich, lively, fermented cereal aroma. The flavour is well balanced with an initial fruity sweetness, a bright minerally saltiness and a savoury umami note which are then all brought together by the bright rice wine-like acidity. There is a very long length to the flavour which continues to be well balanced. When added to butter the combination helps the miso hit new heights as the fattiness of the butter rounds everything off. This miso would be a delight to use in the kitchen.”
